The early astronauts had a diet of specially prepared, concentrated foods, sometimes coming out of tubes. They probably were good for nourishment, but not very tasty to eat.
Later astronauts had more natural foods, prepared on Earth, but made ready for eating in space, for example by heating and/or adding water.
On the International Space Station the astronauts can choose their meals from a varied menu.
Meanwhile dietitians on Earth check that their choices give them the right amounts of calories, vitamins, etc.
